Wazwan is Kashmir’s ceremonial multi-course feast, cooked by master chefs called waza. Guests share a large copper plate (trami), usually in groups of four, and dishes arrive one by one — rista, rogan josh, tabak maaz, yakhni — ending with gushtaba. It is mostly mutton-based; ask us to arrange a Wazwan dinner or a vegetarian Kashmiri meal.

Wash hands at the table (a jug and basin are brought), eat with your right hand from your side of the trami, and leave space — courses keep coming. It is polite to try a little of everything.
